Reason Of Choice:

The reason I chose Thai Food as the culture of my menu is simply because i love their food. it is packed with delicious spices and herbs that give it a distinctive taste.
Bean Fishcakes are a healthy and delicious entree that are one of one of my most enjoyable Thai meal.
Beef and Chilli Stir-Fry is an easy and also healthy alternate to a big greasy main.
I chose my desert because its sweet and tasty without added colours and flavours and is also reasonably healthy.

Bean Fishcakes

Ingredients

  • 2 x 400g cans cannellini beans, drained, rinsed
  • 3 tsp Thai red curry paste
  • 2 kaffir lime leaves*, shredded
  • 1/2 cup coriander leaves
  • 4 spring onions, sliced
  • Plain flour, for dusting
  • 1/4 cup (60ml) olive oil
  • 100g Asian mixed salad leaves*
  • Sweet chilli sauce, to serve

Method

  1. Place beans in a food processor with the curry paste, shredded lime leaves, coriander leaves and spring onions and process just until the mixture comes together. Season with salt and pepper, then form the mixture into 5cm cakes.
  2. Dust each bean cake lightly in flour. Heat the oil in a non-stick frypan over very high heat and cook the cakes for 2 minutes on each side until golden.
  3. Serve the bean cakes on salad leaves drizzled with sweet chilli sauce.


Main:
Beef and Chilli Stir-fry

Ingredients (serves 4)

  • Olive oil spray
  • 2 x 180g scotch fillet steaks, fat trimmed, thinly sliced
  • 1 red onion, cut into thin wedges
  • 2 red capsicums, deseeded, sliced lengthways
  • 1/2 bunch snake beans or 250g green beans, trimmed, cut into 6cm lengths
  • 2 garlic cloves, crushed
  • 2 large red chillies, deseeded, finely chopped
  • 1 tbs salt-reduced soy sauce
  • 1 tbs brown sugar
  • 1/2 bunch Thai basil, leaves picked
  • Steamed basmati rice, to serve

Method

  1. Heat a wok or large frying pan over high heat. Spray with oil and stir-fry beef for 2 minutes until browned. Remove from wok, cover with foil and set a side.
  2. Add the onion, capsicum and beans and stir-fry for 2 minutes . Add garlic and chilli and stir-fry for 2 minutes.
  3. Return beef to wok with soy sauce and brown sugar. Toss well. Add basil leaves and gently toss. Serve with rice.


Desert:
Mango Dessert

Ingredients:

  • SERVES 3-4
  • 2 medium to large ripe mangoes (for tips on buying fresh mangoes, see below)
  • 1 packet gelatin
  • 1/2 cup hot water
  • 1/3 cup white sugar
  • 1 cup coconut milk

Method:

  1. Make sure your mangoes are ripe (see link above) - the fruit should be bright orange or yellow and fairly soft. Scoop out the fruit, including around the stone. Place the fruit in a food processor or blender and blitz to create a smooth mango puree. Leave the mango in the processor/blender.
  2. In a saucepan, heat up the water until it reaches a rolling bowl. Remove from heat. While stirring the water with a whisk or fork, sprinkle the gelatin over the surface of the water and stir briskly in order not to have any lumps.
  3. Add the sugar to the hot water/gelatin mixture and stir to dissolve.
  4. Add this mixture to the mango in the food processor/blender. Also add the coconut milk. Blitz briefly until ingredients are combined.
  5. Pour into dessert bowls or cups and place in the refrigerator for at least 2 hours (or up to 24 if making ahead of company coming). Serve cold on its own, or with some fresh fruit, and ENJOY!


Design Brief
Empires have fallen, Gods have tumbled, temples have been desecrated, battles won and lost, and families divided , but still the recipes of the world have survived. Each generation has influences on these recipes but some recipes are never changed they link us to the generations past.Each country is identified with the food they, the ingredients they use, the cooking methods and presentation of their food.
This year the theme of the Luncheon competition will be Foods From Around The World . Each pupil will design and make a three course meal using a specific country as their inspiration. It will be held on the Week two Tuesday 27th July
The presentation of the entry will be presented as a blog created in My house it will include the following criteria

cook and make veggy cakes
pack utencils and materials eg. Apron, dish cloth
heat up wok and cook stir fry


allow to cool
