Method:
Preheat oven to 160ºC. Place bruschettas on a baking sheet. Drizzle with olive oil. Bake for 5 minutes or until golden. Rub the garlic cloves over the bread. Squeeze and rub the tomato pulp over the bread. Season and serve drizzled with extra olive oil.
Chicken breasts with spanish green sauce and potatoes
Chicken Breasts in Spanish Green Sauce - Pollo en Salsa Verde
Method:
Pour bread crumbs and 1/2 tsp salt onto a large dinner plate. Coat chicken breast in flour on both sides. Pour olive oil into a frying pan and heat. When oil is hot, brown chicken breasts on both sides. Remove and set aside for later.
Finely chop onion and garlic. When hot enough, sauté chopped onion and garlic.
Place chicken breasts into a plate with onions and garlic. Chop and add parsley to chicken. Add salt.
Serve with fried potatoes.
Chocolate mousse
Method:
1. Put the marshmallows, butter, chocolate and water in a heavy based saucepan.
2. Put the saucepan on the stove, over gentle heat, to melt the contents, sitrring every now and again.
3. When all the contents mixed together remove the saucepan from heat.
4. Meanwhile, beat cream and then fold into cooling chocolate mixture until you have a smooth mixture.
5. Let it cool in a fridge for overnight setting.

1. Cut the bread. Equal sizes for the bruschettas.
2. Make the sauce for the chicken breasts.
3. Cover chicken breasts with bread crumbs and salt.
4. Start making the mousse for overnight setting.
The Day:
1. Pre heat oven to 160ºC and place bruschettas on baking paper (drizzled with olive oil) and bake until golden.
2. Slice potatoes and place with the bruschettas in oven.
3.Start frying chicken breasts on both sides with olive oil.
4. Chop onion, garlic and parsley for the chicken.
5. Saute the onions and garlic.
6. When chicken cooked add the sauted onions and garlic and serve with the baked potatoes and chopped parsley.
